Deep umami flavor. Fall-off-the-bone tender. Comfort in a bowl. These Instant Pot Miso Short Ribs bring cozy Japanese flavors to your table in under an hour — no slow simmering required. Using classic pantry staples like miso, soy sauce, mirin, and sake, this dish offers a savory-sweet balance that pairs perfectly with a bowl of fluffy rice.

Traditionally, short ribs require hours of slow braising, but thanks to the Instant Pot, you can achieve the same tender, fall-off-the-bone texture in under an hour. The result? A cozy, comforting dish that tastes like it took all day.
The heart of this dish is in its deep miso-based sauce — combining salty soy sauce, sweet mirin, fermented richness from miso, and the slightly nutty warmth of sake. Garlic and ginger bring aromatic depth, while the beef short ribs soak it all up as they become incredibly tender under pressure.
It’s the kind of meal that feels special, yet is easy enough for a weeknight.

INSTANT POT MISO SHORT RIBS
Ingredients
- 2.5 lbs beef short ribs
- 3 tablespoons miso paste white or red
- 2 tablespoons soy sauce
- 1 tablespoon mirin
- 1 tablespoon sake
- 1 tablespoon sugar
- 4 garlic cloves smashed
- 1- inch piece of ginger sliced
- 1 cup beef broth or water
Instructions
- Make the Sauce: In a medium bowl, whisk together the miso paste, soy sauce, mirin, sake, sugar, and beef broth (or water) until smooth and well combined.
- Add to Instant Pot: Place the short ribs into the Instant Pot. Pour the sauce over the ribs, making sure they’re mostly submerged. Add the garlic and ginger slices.
- Pressure Cook: Seal the lid and set the Instant Pot to High Pressure for 35–40 minutes. Allow it to naturally release pressure when finished.
- Optional – Reduce Sauce: For a thicker sauce, turn on sauté mode after cooking and let the sauce simmer for 5–10 minutes, stirring occasionally until slightly reduced.
- Serve: Serve hot over steamed white rice and garnish with chopped green onions or sesame seeds.
