Strawberry Pancake Muffins (Toddler-Friendly)
Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup whole milk
- 1/2 cup yogurt
- 2 large eggs
- 1/2 cup strawberries chopped
- 1 medium banana mashed
Instructions
- Preheat oven to 375F. Prepare muffin tin with liners and coconut oil spray.
- In a mixing bowl, mash a banana. Add in whole milk, yogurt and eggs to whisk together.
- Mix in flour, baking powder and sea salt. Gently mix everything together & fold in 1/2 of the chopped strawberries.
- Add batter into muffin liners. Top each muffin with a bit of chopped strawberries. Transfer into baking oven & bake for 25 minutes until a toothpick inserted in center comes out clean.
