  • 1/2 cup maple syrup
  • 3 large or 5 medium ripe bananas mashed
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour

Instructions

  • Preheat the oven to 350°F and grease a loaf pan.
  • Mash the bananas in a large bowl, then whisk in the melted coconut oil, maple syrup, eggs, and vanilla extract until smooth.
  • Add the dry ingredients—baking soda, salt, cinnamon, whole wheat flour, and all-purpose flour. Stir until just combined.
