If you’re looking for a protein-packed breakfast burrito that’s also filled with veggies and healthy fats, you’re at the right place. This burrito has turkey bacon, eggs, veggies, cheese and avocado. It also has a crispy exterior so there’s a perfect crisp to EACH bite!

When I wake up in the morning, I look forward to breakfast. There’s just something about the first meal of the day that makes me SO excited. I’ve been in a phase of craving breakfast burritos for the past two weeks and I don’t see myself stopping anytime soon!
Breakfast burritos are ideal because I add in whatever ingredients I have at home. I always have eggs at home (Vital Farms hello!) so I scramble it with veggies like bell peppers, spinach, onion, mushroom and broccoli to add into my burritos. I also add in some other protein like turkey bacon or breakfast sausage.

Breakfast Burrito Ingredients:
- Burrito Sized Tortilla – Instead of regular tortilla wraps, make sure it’s big enough to wrap a burrito! Ones for burritos will be labeled specially “burrito sized”. I like the brand 365 Whole Foods and La Fe Tortilleria.
- Avocado or Olive Oil – These are the two oils I usually use for cooking savory foods. Avocado is great for high heat!
- Veggies – I added spinach and red bell pepper into this burrito but you can sub it for other veggies like onions, mushroom or broccoli!
- Eggs – This is always a must in my breakfast burritos. I’m a HUGE egg fan and I think it’s an important component. Eggs are also a complete protein and a great addition to my diet!
- Turkey Bacon – I used sugar-free nitrate free turkey bacon instead of pork bacon. It’s just a health conscious decision. I try to stray away from eating too much saturated fats for my cholesterol!
- Avocado – This makes all burritos and tacos taste better. Also, why not add in some healthy fats?
- Shredded Cheese – This is optional and since the burrito is pretty packed, I don’t always add in cheese. I’ll usually sprinkle just a little because I roll it up. I like the brands Violife Foods or Miyokos Creamery.

I recently went to Erewhon and was inspired to create a copycat recipe. That started my burrito cravings and instead of spending $17 on each burrito, I bought all the ingredients I needed to make them at home. My husband has been LOVING them. I switch out the ingredients inside so we aren’t eating the same exact thing every morning.

Breakfast Burrito with Turkey Bacon and Eggs
Ingredients
- 1 large burrito tortillas I like the Whole Foods 365 brand or La Fe Tortilleria
- 1 teaspoon oil
- small handful of diced red bell peppers
- handful of baby spinach
- 2 large eggs
- 2 slices turkey bacon I used Diestel Family Ranch turkey bacon
- 1/2 avocado
- 2 tablespoons shredded cheese i used Violife Foods vegan cheese
Instructions
- Preheat pan to medium heat with oil. Add in bell peppers to cook until soft, then add in baby spinach until wilted. Pour in scrambled eggs and cook until eggs are done. Season with sea salt and pepper.
- Remove scrambled eggs from pan and add into burrito tortilla. Add more oil to pan if needed to cook turkey bacon until slightly crisp.
- Add turkey bacon on top of eggs, along with avocado and shredded cheese. Roll up into a burrito and pan-fry both sides in the pan until lightly browned and crisp. Serve with salsa, sour cream and/or avocado!
