I honestly think carrot flavors in baked goods are underrated! I bought a bag of shredded carrots and I was thinking about what to do with them because a recipe I made before this only called for 1/2 cup. Well, this was a pretty awesome choice of mine and I can’t wait for you to try them!

This recipe isn’t overly sweet, has veggies and is has just the right amount of crunch and sweetness in each bite! I also made this greek yogurt frosting to put on top because I actually realized I didn’t have cream cheese at home to make cream cheese frosting. Well, this was a pretty bomb alternative!!

With the weather getting colder, I’ve been using my oven a lot more. I’ve been baking cookies, muffins, cakes, etc. In the summer, I rarely use the oven because it’s hot enough in my apartment. Also, I realized I’ve been in my own apartment for 8 months already! Time definitely flew by… and I’m getting married in just under 4 months. There’s so much to prepare. So much change will be happening in the next year. I’m excited and nervous! There’s a lot to look forward to in marriage and these life changes 🙂

Anyways, if you’ve never tried making carrot cake muffins, this is for you, it’s definitely a recipe worth trying!
