Creamy peanut butter, shredded coconut and chia seeds rolled in these energy-packed bites. They’re great for a snack for both kids and adults! The best thing is they only take 5 minutes to put together and don’t require any oven!

Recently, I’ve been getting into making energy bites again. I’m still in my baking phase but I wanted more different snacks on hand. These have added collagen, which is optional! I use Vital Protein Collagen. Collagen is found in all our connective tissues, ligaments and bones, which help provide our body parents strength and structure. Collagen may also help with skin elasticity, hair and nails as well! It’s not a sure but like a supplement that may help. Personally, it’s helped my hair grow a lot faster! I love adding it to my baked goods for a kick of protein!
These bites were rolled in coconut flour + shredded coconut. I threw some chia seeds in there as well, which is optional! Chia seeds are a great source of omega-3 fats (which are essential) and fiber!

Coconut Peanut Butter Energy Bites
Ingredients
- 3/4 cup creamy peanut butter
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 3 tbsp coconut flour
- 3 tbsp shredded coconut
- 2 tbsp chia seeds
- 1 scoop collagen optional
- small pinch of sea salt
Coconut Coating
- 3 tbsp shredded coconut
- 2 tbsp coconut flour
- 1 tbsp coconut sugar
Instructions
- Mix all ingredients into a large bowl.
- Roll into 9 balls and then roll into coconut coating.
- Eat immediately to leave in the fridge for future snacks!
