Juicy Oven-Baked Chicken
A perfect blend of olive oil and spices, baked to optimal juiciness! This recipe is simply just mixing all the spices together to rub onto the chicken and baked for 25 minutes! Perfect to make ahead for the next day!
Servings: 4 servings
Ingredients
- 4 chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon sea salt
- Pinch of black pepper
Instructions
- In a large bowl, mix together olive oil, garlic powder, onion powder, chili powder, cumin, paprika, sea salt and pepper. Add in chicken thighs to mix evenly with with spices.
- Preheat oven to 400F. Oil the bottom of a glass casserole dish and add in chicken thighs. Drizzle a bit more olive oil on top to coat.
- Place chicken thighs into oven to bake for 25-30 minutes, depending on thigh thickness. To check, cut open the thickest piece to make sure it’s no longer pink!
- When done baking, remove from oven and serve with rice and veggies!

Hi Winnie! I tried this recipe yesterday, and it was delicious! I had 6 chicken thighs though, and they were kind of thick, so I baked it for 35 minutes. It was juicy and cooked perfectly!
