Smashed Garlic Potatoes with Tomato Basil Chicken
These garlic smashed potatoes were tender on the inside and crispy on the outside. Paired with some juicy tomato basil chicken which makes for a quick and easy weeknight dinner!

Ingredients
Smashed Garlic Potatoes
- 9 small fingerling potatoes
- 2 tsp garlic cloves minced
- salt and pepper to taste
Tomato Basil Chicken
- 1 tbsp olive oil
- 2 cloves garlic minced
- 4 chicken tenders
- salt and pepper to taste
- 1 can chunky tomatoes about 2.5 cups
- 1/2 cup grape tomatoes
- 2 tbsp capers
- 2 tbsp fresh basil can sub dried
Instructions
- Preheat oven to 425 F. Prepare baking sheet with oil spray. Bring a medium pot of water to a boil. Add the potatoes to the boiling water on low for 15 minutes.
- Place potatoes on baking sheet and smash each one down with a fork. Add minced garlic and season all the potatoes with salt and pepper. Bake for 18-20 minutes.
- To cook chicken, heat your skillet with olive oil to medium heat.
- Add minced garlic clove to cook for 1 minute before adding chicken tenders with salt and pepper. Allow the outsides to cook before pouring in canned tomatoes and fresh halved grape tomatoes.
- Bring to low and simmer for 10 minutes before adding in capers!
- Mix up and allow to simmer for another 2-3 minutes. Turn off heat and garnish with basil!
