Almond Butter Banana Pancakes (made with whole wheat)
Made with nutritious whole wheat flour, fluffy and thick! Topped with bananas, fresh berries, more almond butter and hemp seeds! These are hearty and smells amazing!
Ingredients
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon cinnamon
- pinch of sea salt
- 1/2 banana mashed
- 1 large egg
- 1 tablespoon almond butter creamy
- 1/4 cup almond milk
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- coconut oil for cooking
- other half of banana, for topping
Instructions
- In a large mixing bowl, mash banana with fork. Add in egg, creamy almond butter, almond milk, maple syrup and vanilla to whisk.
- Add in flour, baking powder, cinnamon and sea salt.
- Preheat pan to low medium heat with coconut oil. Add pancakes 3-4 tbsp at a time to cook until lightly golden on both sides, about 2 minutes. Repeat with remaining batter, adding more coconut oil as needed.
- Plate with other half of banana, almond butter, blueberries and hemp seeds!

Great, however 2tsp of baking powder is too much – they rise at an uncontrollable rate, making them very hard to flip. I would suggest reducing the amount of baking powder to 1.5tsp (if you want them still pretty fluffy), or 1tsp (if you want them less fluffy, about 1.5cm thick, but could differ depending on ingredients used).
Nevertheless, they tasted great, and their texture was also amazing. I eat protein / healthy banana pancakes every morning, and I would say that I would go back to the recipe :).
