These classic fluffy old fashioned pancakes are soft, buttery, and perfectly golden every time. They’re made with simple pantry staples and come together in minutes. Add chocolate chips for an extra treat, or keep them classic with butter and maple syrup!

There is something so comforting about a stack of homemade pancakes on a slow morning. These classic fluffy old fashioned pancakes are soft, buttery, and perfectly golden every time. Made with simple pantry staples, they’re an easy breakfast recipe you’ll find yourself making again and again for weekends, holidays, or even breakfast-for-dinner nights.
One of my favorite things about this recipe is how versatile it is. You can enjoy these pancakes just as they are, or make them extra special by folding chocolate chips into the batter. The chocolate chips are completely optional, making it easy to customize the pancakes for everyone at the table.
Another reason I love this recipe is that it works beautifully with either melted butter or melted coconut oil. Butter gives the pancakes a rich, classic flavor, while coconut oil is a great dairy-free substitute that still keeps them soft and fluffy. Both options work wonderfully, so use whichever you have on hand.
When it comes to toppings, I usually keep it simple with butter and warm maple syrup. Sometimes, though, I like spreading a little almond butter on top for extra protein and a delicious nutty flavor. Fresh berries, sliced bananas, or a sprinkle of powdered sugar are also delicious additions.
The secret to fluffy pancakes is not overmixing the batter. Stir everything together just until combined. A few lumps are perfectly fine. Letting the batter rest for about five minutes before cooking also helps create thick, soft, fluffy pancakes every time.
