Fluffy Apple Pancakes perfect for busy mornings and freezer friendly! These have grated apples, cinnamon and ginger to bring out perfect fall flavors! The cinnamon sautéed apples on top are a must!

This is a quick simple recipe! I wish I took more photos but I quickly filmed this recipe since my toddler was getting super hungry & wanted to dig into the pancakes + apples. She was a BIG fan of the apples. I didn’t add in sugar when I made hers – but add in sugar if you make them!
I’ve been having her help me with a lot of recipes like a Matcha Latte and Pumpkin Bread on my Instagram. She’s been getting better at helping me add ingredients into a bowl, mixing, cracking an egg & waiting patiently without putting her hands into the mixing bowl.
She always asks to help whenever I take out the measuring spoons + mixing bowl.
These pancakes are toddler friendly & freezer friendly which are great for busy mornings. I added 3/4 of this batch into a freezer friendly bag. I warm them up on a plate with a wet paper towel on top for 45 seconds before serving.
These pancakes are topped with cinnamon sautéed apples but you can also add maple syrup, powdered sugar or other fruits of choice!

Apple Pancakes
Ingredients
- 1 3/4 cups all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 2 tablespoons brown sugar optional
- 1/4 teaspoon sea salt
- 1 large egg
- 1 1/4 cups milk of choice
- 2 medium apples grated
- splash of vanilla extract
- coconut oil for cooking
Cinnamon Apples
- 2 teaspoons coconut oil
- 2 apples peeled, cored and sliced
- 1/2 teaspoon ground cinnamon
- 2 tablespoons brown sugar optional
Instructions
- In a large bowl, mix together egg, milk and vanilla. Add in flour, baking powder, cinnamon, ground ginger, brown sugar and sea salt.
- Grate in two apples and mix until just combined.
- Preheat pan to medium heat with coconut oil.
- Add in pancake batter with a spoon or 1/4 cup measuring cup. Cook first side until it bubbles, then flip and cook until lightly golden brown. Repeat with remaining batter.
- Add more coconut oil to the pan and add in sliced apples along with cinnamon to cook until slightly softened. Add in brown sugar to caramelize. Cook for about 3-4 minutes. Remove from pan and top pancakes!
