Pan-seared sesame salmon wrapped in nori, sushi rice, cucumbers and avocado! A perfect finger food when you’re craving sushi! Think sushi but without having to use a bamboo mat so this is a much more simple recipe!

Sesame Salmon Sushi Hand Wraps
Pan-seared sesame salmon wrapped in nori, sushi rice, cucumbers and avocado! So simple and delicious, you'll satisfy your cravings with this!
Servings: 2 servings
Ingredients
- 8 small nori sheets
- 2 salmon filets
- 4 tablespoons mayonnaise
- 1 avocado thinly sliced
- Sesame seeds for garnish
- Furikake for garnish
Cucumbers
- 1 small cucumber julienned
- 2 tablespoons vinegar
- 1/2 teaspoon sugar
- pinch of sea salt
- 1 teaspoon sesame oil
Sushi rice
- 1 cup short grain sushi rice
- 1 cup water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/4 teaspoon sea salt
Instructions
- Prepare sushi rice and cucumbers – leave to side. I cooked the rice in my rice cooker. The cucumber ingredients were just all tossed together in a large bowl.
- Preheat pan to medium heat with olive or sesame oil. Cook salmon filets with salt and pepper. Cook until flaky. Remove from pan.
- To assemble, place one nori sheet shiny side down and press down a spoonful of sushi rice, leaving a 1/4 inch border. Spread mayonnaise over rice. Top with some salmon, cucumbers and avocado. Garnish with furikake!
