Whenever I have extra-ripe bananas I have two options, bake banana bread or freezer them so I can bake banana bread in the future. There is just something about freshly baked banana bread that’s so warming and cozy! In the fall and winter, banana bread also hits differently… even though I love it year round!
During my first pregnancy, I had the biggest aversion to bananas and couldn’t eat it until about 2 months postpartum. I was almost scarred but how bad I hated it… haha during this second pregnancy (well, technically third because I had a MC), I had an aversion up to 16 weeks!
Now, I have bananas with my french toast and in baked breads and I’m fine with it. Thankfully!
It’s September now & the weather is slightly cooler now. I’m so tired of the 100 degree weather. I don’t want to go out because I’m terrified of fainting… which happened to me once this summer. Just pregnancy things.
I’m in a phase oh baking loaves again. I’m not a huge baker, I prefer stovetop and making savory meals but once in a while, I’ll bring out the loaf or cake pan!

Simple & Classic Banana Bread
Ingredients
- 4 overripe mashed bananas
- 1/2 cup melted coconut oil can sub unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 3/4 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon sea salt
- 1/2 teaspoon ground cinnamon
- optional toppings or mix-ins: chocolate chips, shredded coconut, crushed pecans or walnuts
Instructions
- Preheat oven to 325F. Prepare a loaf pan with spray or parchment paper.
- In a large mixing bowl, mash bananas. Whisk in coconut oil, eggs and vanilla.
- Add in flour, sugar, baking soda, sea salt and ground cinnamon.
- Transfer batter to loaf pan and bake for 60-70 minutes, until a toothpick comes out clean.
