Creamy hummus in a quick, fresh and nutritious vegetable packed wrap! Fresh cucumbers, sliced tomatoes, baby spinach and shredded carrots for a refreshing lunch to can quickly make on a busy afternoon!
Recently, I tried a hummus veggie wrap from Trader Joes and I got inspired to make my own! It’s actually super simple – I bought lavash whole wheat bread, cucumbers, tomatoes, baby spinach, shredded carrots and creamy garlic hummus. I also added sliced turkey in this recipe but you can omit that for a vegan wrap! There’s just something about fresh raw veggies with creamy hummus that’s SO good.
With staying-at-home, I’ve been making many asian inspired recipes like my pan-fried marinated tofu, honey garlic shrimp, crispy honey sesame chicken lettuce cups and baked veggie egg rolls. These have all been recipes I’ve made over 3 times each during quarantine! I’ve also been baking a lot, especially with summer berries and of course, banana bread 🙂
Ever since Jovin and I got married, things have slowly opened up again, which is nice! However, since June 13, Los Angeles had to close down all places of worship, restaurants indoor and outdoor, gyms and salons. We haven’t been eating out but it’s a bit discouraging to see how our progress isn’t as quickly as other countries. It all starts with ourselves and doing our part in helping bring change. I always have my mask on, socially distance myself when standing in line or when I’m out and always have hand sanitizer on me!
I love going on walks in the morning or mid-day since it’s my way to getting our the house to get fresh air. I can easily walk to the grocery store down the street to get groceries whenever I need it. I go twice a week!
This wrap was so delicious and can easily be switched out for another spread like mayo, pesto or another creamy aioli sauce! Hummus is just one of my favorite spreads in wraps, sandwiches and as a dip for fresh veggies! If there’s hummus, I’m sold.
Turkey Hummus Veggie Wrap
- 1 large lavash bread or tortilla
- 1/4 cup hummus
- 2 slices turkey breast
- 1 small cucumber sliced lengthwise
- 1/4 cup shredded carrots
- 4 slices tomato
- handful baby spinach
- Spread hummus on bottom half of wrap/tortilla, covering until 1/2 inch from sides.
- Place sliced turkey, cucumber, shredded carrots and tomato on top.
- Fold wrap tightly, tucking in all veggies and roll until you almost reach the other end. Add another 2 tbsp spread of hummus and finish rolling together. The additional hummus at the other end acts as a "glue" to prevent it from unrolling.
