These fluffy pancakes are packed with cozy fall flavors like pumpkin puree, pumpkin spice and cinnamon! Made with oat flour and sweetened with a hint of coconut sugar!

If there were three flavors I had to pick as my top favorites, pumpkin spice is at the top. Pumpkin spice is basically a mix of cinnamon, nutmeg, all-spice, ginger and vanilla. Not all pumpkin spice is the same, but generally those are the spices that go into making a pumpkin spice mix!
Once I open a can of pumpkin, I think of all the recipes I want to make. I usually add 1/2 cup to 1 cup of puree in my recipes. I have about 9 cans in my cabinet right now so I’m stocked!
For the past 3 weeks, I’ve been checking all my local grocery stores for canned pumpkin. They were always out of stock. When I went to TJ’s two days ago, they just stocked up… so I grabbed 5 of them, haha!
I also have some other pancake recipes on my blog! I really like both my Blueberry Banana Pancakes and Almond Flour Pancakes! I’m currently working on a recipe for Sweet Potato pancakes! If you follow me on Instagram, you’ll know this past week I’ve gone through 8 sweet potatoes. I baked fries, mashed them into bread loaves and have it steamed or roasted for breakfast. Sweet potatoes is a favorite!
Baking with Oat Flour
Oat flour is easy to make at home. You just add raw oats into a blender of food processor and pulse until it’s a fine texture. When a recipe calls for 1 cup oat flour, measure it AFTER. Oat flour is a gluten-free, light and absorbent flour that can be used in cakes, breads and muffins! I have been using oat flour in so many of my recipes lately. It is cost efficient, nutritious and I am a fan of the texture it gives my baked goods.
Pumpkin Puree
Make sure you use pumpkin puree and not pumpkin pie filling. Pumpkin pie pilling contains added spices and other ingredients . Your can of pumpkin puree should be pure pumpkin!

Fluffy Pumpkin Spice Pancakes (Gluten-Free)
Ingredients
- 1/2 cup oat flour
- 1 tsp coconut sugar
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1 tsp baking powder
- pinch of sea salt
- 1/4 cup +1 tbsp pumpkin puree
- 1 egg
- 1/4 cup almond milk
- 1 tbsp coconut oil
Instructions
- In a medium bowl, mix together oat flour, coconut sugar, pumpkin pie spice, cinnamon, baking powder and sea salt.
- Add in pumpkin puree, egg and almond milk.
- Preheat pan to low-medium heat with coconut oil. Add in batter about 3-4 tbsp at a time.
- When bubbling, flip over to cook until both sides are golden brown, about 1-2 minutes. Remove from pan and repeat with remaining batter!
