Rosemary is one of my favorite herbs to roasted potatoes in! It has a distinct sharp lemon-pine flavor and is one of the most aromatic herbs!
The potato wedges were tossed in the baking pan and then baked for 35 minutes and left on broil for 2 minutes to get it nice and golden crispy! I like to dip my potato wedges in ketchup or BBQ sauce! I like the originals 🙂

Roasted Rosemary Potato Wedges
- 1 large russet potato
- 2 teaspoons olive oil
- 2 tablespoons dried rosemary
- 1/2 teaspoon garlic powder
- salt and pepper to taste
- Preheat oven to 400F. Prepare baking sheet with cooking spray.
- Place wedged potato pieces onto sheet and toss with olive oil, rosemary, garlic powder, salt and pepper. Bake for 35-40 minutes, flipping once in between.
