Paleo, dairy-free and grain-free brownies made with almond and coconut flour, packed with walnuts and melty chocolate chunks in each bite! These make for a perfect afternoon snack when you have sweet cravings!
If you are looking for brownies that are gooey, and soft but crunchy on the edges, look no further! These are made with coconut flour and almond flour, making this recipe gluten-free! I used coconut sugar as a sweetener and almond butter as a fat. You can substitute almond butter with cashew butter, butter, ghee or coconut oil if desired. Almond butter adds flavor! I was going for a chocolatey and nutty taste here, so this was perfect!
Recently, I made Fudgy and Chewy Brownies, which made me crave more brownies! I always have nuts in my pantry for baking, either walnuts or pecans. In my personal opinion, most baked desserts are incomplete without some crunch π I’m a big texture kind of girl so it makes all the difference! Also, if chocolate works well with the recipe, no doubt I’ll fold some into the batter and sprinkle more on top as well.
I’ve been baking all sorts of desserts lately. I’m branching away from Banana Bread even though I literally bake a loaf at least once a week. Brownies, cookies, cake bars are becoming more common! I know once winter comes around the corner, there will be tons of baking in my kitchen almost everyday! Fall/winter flavors are also just so comforting. Honestly, I’m ready for fall sweaters, pumpkin spice and lattes already! It’s my favorite time of the year! Ever since Jovin and I got married two months ago (almost three!!), I’ve been able to cook and bake so much more. I love it! Cooking for two is so much easier than cooking for one!
Coconut Flour
Coconut flour is gluten-free and grain-free, made from dried coconut meat and derived from coconut milk. If used incorrectly, coconut flour will dry up the recipe. Eggs are used to help provide structure and moisture. Most recipes that call for coconut flour should not be subbed with another flour.
Almond Flour
Almond flour is made from blanched almonds with skins removed and then grounded to a fine texture. This is also a gluten-free and grain-free paleo baking flour! Almond flour adds nutty flavor and texture to baked desserts, savory dishes and can even be used as a coating for baked chicken or fish!

Gluten-Free Chocolate Walnut Brownies
Ingredients
- 3 eggs
- 3/4 cup coconut sugar
- 2 tbsp almond butter
- 1/4 cup and 2 tbsp almond milk
- 1 tsp vanilla extract
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup cacao powder
- 3/4 cup chocolate chips or chunks
- 3/4 cup walnuts crushed
Instructions
- Preheat oven to 325F. line a. 8 x 8 baking pan with parchment paper.
- In a large bowl, mix together eggs and coconut sugar. Stir in almond butter, almond milk and vanilla extract.Β
- Add in almond flour, coconut flour and cacao powder. Fold chocolate and crushed walnuts in with a spatula. Pour into prepared pan and top with extra chocolate + crushed walnuts.
- Bake for 20-22 minutes. Allow to cool for 15 minutes before transferring to a cooling rack and cutting into 16 bars!
